David Ritchie is the general manager of a non-union flour mill in Colorado. "There are 756 registered members of the professional millers' organization in the U.S," he says.

Ritchie believes the outlook for millers in the U.S. is poor. Due to automation, mills are able to get by with fewer employees.

Ritchie says the starting salary in a flour mill is around $6.25 to $8.50 an hour in the U.S. This increases to $12 an hour with 10 years of experience.

After 20 years, a miller might make $15 to $20 an hour. "Mill managers in the U.S. with 15 years [of] experience make around $40,000. A general manager for a regional mill in the U.S. can make $110,000."
